Author Lynx/mime-types: How to change what loads text/plain?

I'm using lynx under Linux. When I browse to a text file, it loads it up
in kedit (Some Gnome/KDE thing). I want to change this to gvim.

I found files /etc/lynx.cfg and /etc/mime.types, but neither contains the
string "kedit". So, where else should I look?

/etc/mailcap is a good place to look. The mailcap file is where the action is.

/etc/lynx.cfg is done by the packager - if they didn't blunder too badly,
the GLOBAL_MAILCAP setting points to /etc/mailcap (or the equivalent).
