| Recently updated "Redhat-Config-Network" to v1.2.15 release 1, via rhn
up2date. Now reference to 127.0.0.1 localhost has disappeared from the
"Hosts" window in the Network Configuration app. However all info still
remains in /etc/hosts file, and everything seems to still work
Is this to be expected? Is it possible to get Network Configuration app
to display the info again?

probably run the redhat-network-config or whatever program. If redhat
is storing their information seperately from /etc/hosts that would seem
to be a mistake to me.
