You can host multiple websites on any of the server editions of Windows.
Host headers is one way, multiple IPs is another.
The following KB Article explains how to use Host Headers:

If you still have problems after reading thru that article i think you
need to tell us what the problem is. That is, what is happening when you
try to use Host Headers to host multiple websites. What, and where does it
go wrong, and what is the error message you see?
