Dan -
IIS 6.0 comes locked down and ready to go. Everything I read when I was
doing the same thing pretty much left it at that.

In addition, I would strongly recommend:
1. a good virus scanner w/real-time scanning
2. a good software firewall allowing only the ports you setup to run FTP on.
The built in Windows Firewall should be good enough for what you want.
3. disallow annoymous logon
4. some sort of backup schedule
Also, depending on disk space or how much you want to monitor, you may want
to enable the Disk Quota feature on Windows Server. Look here.
