Is there any way in which I can see the actual mail
messages that are currently queued up in the Exchange
queue's?

I can currently only see that there are a total of X
messages waiting to go to a particular domain. I wish to
be able to see the actual messages so that I can
1) Freeze individual messages
2) Delay individual messages

Right click the queue in question and select "Enumerate 100 Messages". Click
on that queue and you'll see all the messages currently in the queue.
