IIS and SMTP - outgoing mail

I have a server that captures spam for incoming mail and
then forward email to my exchange server. I would like my
outgoing mail to be forwarded from my exchange server to
my spam server before leaving my network?

So do it.

Usually, you make the spam server the smart host for the Exchange SMTP
mail.
