Author setting up testing server with SQL

I am running Windows 2000 Server and I have already installed SQL Server
along with IIS for my web-site. my main question is, I want to Install
Outlook on my server for an email client that will only communicate with my
IIS applications. For example, my IIS web-site and SQL will send out
automated emails (from email addresses in the SQL db) to a user. I want to
set up that same user's email account in Outlook to retrieve email locally.
At that point, I want to open an email, click on some link that the email
server sent and have that update my database, etc. It is very much like
setting up a fully working web-site and sql server on my test server. I want
to use this for presentations, etc.
