Could anyone tell me if (and how) it's possible to set-up an SMTP virtual
server in IIS 5 that listen on TCP port 25 and forwards some e.mails (the
rule is based on remote domains) to an internal SMTP server that is
listening on a different port (for example 26) ?

SMTP Server's properties. Delivery tab. Outbound Connections. Bottom
item, TCP port... Change it to match your desired port.
