From and Subject being stripped from Emails via SMTP

I am running a new virtual SMTP service for a mail
subdomain. My outgoing mail is sending out fine but when
it is rec'd on the other end, the From and Subject lines
have been stripped. This is causing a problem as some
clients reject these type of what seems anon emails.
I have tried to send to a variety of external addresses
and this behavior is consistent. Any ideas what is
causing this?
Windows 2000 Server
SP3
IIS version not sure how to find that...
