IIS and SMTP - IIS SMTP Problem

For the most part, the server that I set up on IIS seems to be working ok
with the exception of incoming email from a submit form. The problem I am
having seems to stem from the SMTP Server properties. On the general tab for
the Default SMTP Virtual Server, it has an IP address of 207.173.258.58 which
I am unable to edit. Whenerver I click on Advanced and then edit, the box
that opens will not let me make any changes. I was under the impression that
the IP for this server was by default 127.0.0.1 so can someone straighten me
out as to what the correct IP address should be?
