Default SMTP server does not appear in the list

| Hello,
i'm TRYING setup a mail server with GFI MailEssentials on it. It is going
to temporarily take the place of a server running the ME software. The
server is running very slow. I started the install and then decided to read
the instructions (smart huh?) Anyway, the instructions said to install
Exchange server 2003 BEFORE installing Mail Essentials, which i did bot do.
I removed ME for SMTP and Mail Security then installed Exchange. Now when i
try to follow the instructions for installing MailEssentials, i am at the
part where i need to access the properties of the Default SMTP server. The
Default SMTP server is no longer in the list. Could someone please tell me
how to get this back?
