Hi,
Im sending emails via Virtual SMTP Server installed with IIS. My
question is how my Virtual SMTP Server knows, where other email servers
are located. Or maybe it connects with email serwer of my domain first?

The SMTP Virtual Server uses DNS. It will query the DNS to find MX (Mail
Exchanger) records for the remote domain, and attempt to deliver mail to the
remote mailserver (unless you have smart host configured)
