I have a quick question... now that I have my Index Service Catalogs setup
and configured the way I want them, is there a way to back the configuration
up in case I have to do a restore at some point in the future?

Not any supported ways, but I suppose you could back up the registry info at

HKLM\system\currentcontrolset\control\co
ntentindex
