Author French docs on an English server

Our server is in English with UK regional settings.
The site I'm currently designing is in French with French .doc and .xls
documents to index.
How can I get MSIDXS to index them as French documents and not English ones?
How does MSIDXS know when to use noise.fra and when to use noise.eng to
index documents?

Thanks for your answers.

Henri
