What a Microsoft Site Server can do for an organization? Any documentation
about that?

Please understand that Site Server has been discontinued, and in fact is
several years out of support. It was a large and complicated product,
which included knowledge management, search, content management,
replication, reporting, personalization services, etc... Most of its
functions have been spread among many other current products (Commerce
server, Content Management Server, Application Center, and SharePoint,
and maybe a few others)
