Author webbot saveresults mail appears to be from user , not server - how

We have migrated or web site from NT4/IIS4.0 to Windows 2003/IIS6.0. We are
using Front page extensions. On the old web site a form used the SaveResults
webbot to send an email. These emails apeared to come from the user who
submitted the form (BTW the format of the name is user@webserver, which isn't
a "real" email address).
On the new server, the emails apear to have come from the address specified
in the "From Address" in the front page server extensions config settings.
All the posts I have read state that the functionality I am getting on the
new web site is expected, and there is no way to change this. So why is it
working differently on the old site ? ( the old site still exists and I have
sent a test mail today).
I didn't set up the old web site, so I don't know what other software may
have been installed to enable this (I can't see anything). The web page
itself has just been copied fron old server to new and has not been changed.
The relevant bit of the web page is below:
//--></script><!--webbot BOT="GeneratedScript" endspan --><form
method="POST"
action="../../_vti_bin/shtml.dll/ISMobilePhones/NewPhone/phone_app.htm"
onsubmit="return FrontPage_Form1_Validator(this)" name="FrontPage_Form1"
webbot-action="--WEBBOT-SELF--">
<!--webbot bot="SaveResults" startspan S-Email-Format="TEXT/PRE"
S-Email-Address="mcooper"
B-Email-Label-Fields="TRUE" B-Email-Subject-From-Field="FALSE"
S-Email-Subject="New Mobile Phone" S-Builtin-Fields
U-Confirmation-Url="thankyou.htm" --><input TYPE="hidden"
NAME="VTI-GROUP" VALUE="0"><!--webbot
bot="SaveResults" endspan i-checksum="43374" -->
