FPSE 2002, FP 2003, and IIS6.0 - Strange Reactions

| We currently have 4 websites being managed on our server by IIS6.0. Two of the sites are simple brouchures and are "plain Jane" sites. The other two have forms for users to fill out, and that requires FPSE to be used on the server hosting this.
Now bear in mind that I'm not the most proficient website administrator out there (I'm mainly a Database Programmer), and when we used IIS4 it was click, click, done. Not even close with IIS6. One of the interactive sites works fine. The form sends the proper email and that seems to be OK. However we are adding this new site on that has the same type of form. When I go to set it up in IIS6, I get an error that states the extensions are too old. Everything is up to date, so I'm not sure where that's coming from. The frustrating part is I have to tear down the IIS setup, choose a different name, and try again. Lately that has been unhelpful as well.
I have published to the web server either directly to the drive (\\server1\web sites\website.\etc...) or on a local hadr drive then Copy & paste it on the server, but still does not load the extensions. SharePoint is loaded on this server, but it's been a dissapointment so far. It's hard to use.
Currently the working website is still OK, the "Plain Jane" Websites work, and this new one does work as a "plain Jane" site, but I need to get the form working. That means I need FPSE working. Are there any manual "tricks" to get the extensions in IIS6 to be enabled, or do I always have to go to step 1 on every attempt?
Thank you for your time
