Can we talk an EDI map that was created in Mercator and
migrate it to biztalk? How much work would be involved?

You'd be starting over... I don't believe that there's a conversion utility
to convert the map itself. However, the map logic is already determined, so
this is not a "mental" process.

How much work? Depends on the complexity of the input, the output, and the
mapping.
Most mapping efforts, where the mapping is well known, are not extremely
long efforts. Leave time to debug.
