I have an orchestration which has a couple of web references to services here
in my development area. I have to deploy this solution out to a client, do I
have to re-define my web references and rebuild my assembly on site to point
my web references to the correct places?

You dont need to re-define your web service references. Just change the WEB
service URL at the port level.
