I went throught the intense BizTalk 2004 Configuration Wizard and before I
pulled the trigger I saved to a config file. The Configuration install
errored out complaining about a user account that had a space in it. My
question is -- Do I have to now go through the entire Configuration Wizard
again? Or can't I simply load the config file and then make a few adjustments?

Yes, and no. Yes, you can use the saved config file to install, but the
configuration wizard will run in silent mode when run with a config file.
Thus, if you want to use a different configuration, you'll need to manually
edit the file (which I wouldn't recommend unless the changes are very
minor).

One thing to watch out for is that when you save the config file, no
passwords are included, so you need to manually open the file in notepad and
write the passwords again. You can take the chance to change the account
name, as well.

Once you've done that, you need to run:

<btsinstallfolder>ConfigFramework.exe /s <ConfigFile.xml> /l <LogFile>
