Are all versions (standard, pro, architect, etc.) of VS 2005 supported by
BizTalk 2006?
I would like to evaluate the product for my company before purchasing it. As
we are currently still using VS 2003, do you thing it is possible to use
BizTalk 2006 Beta 2 with VS 2005 Express (just for a proof of concept)?

I'm not sure if express would work. However, you would be on the safe side,
I think, with one of the VS2005 trials, which you can get from here:

I have tried VS Express and it does not work with BizTalk.
I'll request a trial version (though it will take few weeks to arrive).
