how do you find out your server type has well has the incoming and outgoing e-mail server?

If you are asking about the settings for the SMTP transport (where you set
your SMTP server) it is in the BIZTalk Administration console -> Adapters,
SMTP, Send handlers, in the properties for the send handler, Note that this
is only for the outgoing e-mails, no inbound SMTP recieve handler is
supplied out of the box.
