Migrating/Upgrading to new Biztalk Instance with higher version

Origination Server:
Windows 2000, Biztalk 2000

Destination Server:
Windows 2003, Biztalk 2002

How do we migrate and upgrade the data? Once for testing and then again for
the knife edge cutover?
