Is it possible to set-up a BizTalk Receive function to point to a remote
server?

Is there any special configuration details that need to be considered?

This is a BTS2002 environment.

Sure you can.

What is required depends on which type of receive function you are
trying to set up. HTTP, FILE, other?

Basically, you need permissions on the remote server. If you are using
the File Receive Function, then the user running BizTalk must have
permissions to read and delete files on the file folder access on the
remote server.
