If you don't use IIS the following will be unavailable.

BAS - As it uses Sharepoint which itself needs ISI
HWS - Human workflow requires IIS.
SOAP/HTTP Receieve locations cannot be defined.

Biztalk won't be able to send SMTP using the localhost
because SMTP requires IIS, this is not normally a problem
as the SMTP server is usually a dedicated machine on the
network.
