Where can I find the schema for this so I can create a binding file for use
with the Deployment wizard?

You can use the deployment wizard and create your own.
Export Bindings, and then you speficify where you want the file created.

Thanks Eric.

That is what I have already done. However that exposes a full schema only
if one uses all the various options available. I had to hand an xml file
generated by the wizard which neede to be extended. Whilst I could make
educated guesses at the content of the additions I needed to make bearing in
mind that I am taking over someone elee's work, a schema could have converted
that into a certainty, but I could find no such object.

I was therefore forced to manually recreate all the ports used by the now
extended and deployed orchestratiion before using the wizard to get at what
would have been available to me much more simply if only a schema had been
available.

Just an observation for future improvement! :-)

I seem to remember seeing the schema that represents the binding xml file.
Unfortunately, I have searched the msdn site and cannot seem to locate it
now. You might have better luck, but I am sure I saw it there somewhere.

For BTS 2004, check in the sdk utilities for the installer project, there is
an XSD in there for the binding file. I'm not sure if this is supported or
even recommended, but it is there. For 2006, there is no installer project
in the sdk, as you are guided toward using the msi features of the admin
tool.
