How will I create the XML schema for the data received in
EDI formats by the EDI adapters and map it into my
orchestration.

Download the MAY update of the SDK and the JULY documentation update of
Biztalk Server, find in the documentation the Biztalk EDI tutorial No 1, and
you can find a receive EDI solution.
