I'd like to be able to see what applications were synchronized over several
days. In the details pane of the AC MMC I see synchronizations for the
previous 24 hr period, approximately. Is there a way to increase this time
frame, or is there another way of gathering the requested information?

Try the event logs or metabase snapshot.
