Why is a backup to DVD so difficult?

is there a way to backup several 30 GB directories
with many files
on DVD-R or DVD-RW
and being able to restore separate files if necessary

spanning should be necessary
can i use an incremental system afterwards too?
can this be done automatically?
over the network?

using WinXP pro, using NERO 6 to write DVD's
