Best way to backup the following scenario...

Will have a server running 2003 server and this will be backed up to an
Iomega REV drive.
I will also be replacing a second very old Compaq server that is only there
to store user data and images, etc. I was thinking
of replacing this with an external 250GB hard drive. The problem is, what
is the best way to back this up?

I thought about using a second external drive or perhaps getting an external
USB SCSI setup with SATA drives.

Any thoughts will be appreciated.
