If the tor server is configured as an exit node, the server operator can see the
data exiting the network.

There isn't one server, there's a bunch, and you will be using three at a
time. like this.....
You > A > B > C > Website
This sort of chaining means that A can see who is using Tor, but not
anything that they're doing. B can see nothing at all, and C can see
what's going on but not who is using the Tor network.
So the answer to your question is "yes and no". SOME Tor server operator
is going to be able to see everything anyone could in a normal connection,
but it's mostly useless information because they can't tie it to any
person or user.
