If you have this configuration:

you > stunnel > sockscap > tor > destination

will the destination know your ip ?

You're asking... "If I put something in an envelope, will anyone read
it?". The question is too vague to answer accurately.

The tools you're proposing to use will hide your IP. Or rather Tor will
hide your IP. Stunnel will secure content from snoops, and Sockscap
will allow your to tie things together. Used properly your IP will
remain hidden unless something that's transmitted as part of the
connection's content gives you away. Some applications will do this by
default.
