Just curious as to why the George admins decided to add a disclaimer
at the bottom of every post recently, when before they didn't?

Guess what. A remailer is offered as a free public service and its
operator has every right to add any disclaimers they deem appropriate.

Let the people who don't like disclaimers use another remailer, run
their own, or use nothing at all. It's that simple.
