I just checked the Call Manager compatibility Matrix, but not sure if I
am reading this right. Do the new 7961 and 7941 phones require CCM
4.2.1 to be used?

That would be odd, since the 7961's have been out for awhile now, and
4.2was just released this month. Do you mean the gigabit phones?

The compatibility matrix only lists the default loads for IP phones
per CM version. 4.2(1) and 5.0(1) are the only ones that out of the
box have default loads for the 7941 and 61 phones. They work just
fine on older versions of CM however.

Personally I have a 7941 registered with CM 3.3(5)SR1 server but only
because it auto registered. I suspect a later SR or device pack will
be necessary for me to add one manually.

Well that makes a lot more sense. That was one of the other concerns
(Not seeing it as an option to add manually). If you have a lot of
these out there (79X1) and come across a bug, what's the quickest way to
upgrade them all if you can't change the default load in CCM? I am
about to place an order for more phones and would like to start ordering
the 79X1 series going forward.

defaults. What version of CM are you running now?

4.02a (sr2b). I guess it's about that time for an upgrade. Let me add
that to the list of IP Telephony projects that keeps mounting....

The latest dev pack (45.4) on CCO should take care of this for you.
It should make the load for the 41 and 61s TERM41.7-0-3-0S.
