Is there an application, GNU or otherwise, that can be used to stress
test a UNIX based Apache installation?

Apache Bench comes with httpd and Apache Flood is also available under
http://httpd.apache.org/. There are lots of others too, depending on
your specific needs.

(By the way, Apache is not "GNU". It is Open Source but not copy-
left.)
