Splitting a product advisor category into 2 new categories?

Hi -

Our business sponsor wants to split one of the product categories into 2 new
categories. I think we need to delete the product data and category
information associated with the "old" category, create the new categories,
and then populate these with data. My questions are:

What's the best way to completely delete a category?
What's the best way to create a new product category?
