I have a need for 2 catalogs that share all of the same data except the item
descriptions, units of measure, and prices. In other words, they share the
same sku, manufacturer part number and categories but could have a different
catentry description, price, and unit of measure.

Has anyone had this scenario before? And if so, can you recommend anything?

Sure. Easy enough. What you describe is standard stuff but there are a
number of ways to implement and would require a couple of rows of simple
sample data from you to be effective. Also knowing which version of
Commerce your on would be required to proceed.
