Out of the Box WPS 5.0 always brings you to the Welcome page. Is there any way to change this?

What do you exactly mean? The first page when calling
http://localhost:9081/wps/portal (for unauthenticated users) or the
first when login ?

In general, go into "Manage Pages" section of WP. The first page in the
list of pages is the first page to be rendered.
