I am interested in learning about the deployment of assemblies to remote
servers. What are the preffered methods and are there any web links for the
appropriate documentation

There are a number of scripts in the SDK for BizTalk.

Most samples come with a .bat file to kick off the deployment.  You can
start by mimicing those scripts.

In addition, you may also consider BizTalk deployment using nAnt.

Note that the story will be quite different for BizTalk 2006, which improves
this area of the product a lot.
