My question is, can I use AppCenter to replicate a pub
share (and all documents in the pub share) to another
server? Sort of mirroring the pub share so that all my
documents are secure.

No, AC2K will replicate only local file content. If you have a share that
your website uses for example, AC2K only replicates the metabase bindings
for that, but not the sahre's content itself.
