when I create new catalog I've only 5 selections for Product Unique ID and
Variant ID. Why doesn't it show other Properties that I've created in
Properties Definition and added to New Product Definition etc. New
properties are selected to Show in the list and Display on site.

The property should be
1. String, integer, biginteger datatype. If string datatype the maxlength
should be less than 256 characters
2. Should not be multilingual

Thanks for your reply you are a great help - I was creating a SKU in custom
properties but SKU must exist by default - didn't get an error when I did it
but when I deleted my SKU all started to work.
Another Variant related question - I defined Product Properties to include 4
Property Definitions. When I created those I didn't select Show on Site but
did select Include in the List. I was hoping that I'll be able to assign ie
Finish to Variant but it wouldn't be listed on the Variant on the page.
However all Variant Properties are listed on the webpage. Is there a way to
remove them without editing the web page.
Thanks a lot for your help - Mark

See if this article helps. This uses the DisplayOnSite attribute of the
property to control if the property should be displayed or not
