Two solutions:

1. Put the  " Verify = <level> "  in the Service-Options section(s) of the C
onf file.

2. Run multiple instances of Stunnel each with their own Conf files
passing the Conf file on the command line.
ex.
stunnel -foobar.conf
stunnel -barfoo.conf
