To call people via a SIP address, it has to be put in the Fritz!box'
phonebook. If she wants to dial normal phonenumbers (even when the call
goes over VOIP), either phonebooks can be used.

Doesn't she still need a separate number to be reachable on? Maybe you can
port your NTL number to a VOIP provider? (I don't know if or how this is
possible in the UK)
Anyway, your step-by-step plan should work ok.

It's better not to use the PBX in the Fritz!box then, if you already have a
real PBX.
