This might seem easier than you think.

Since there's one point where all outside calls hit the network, you
will first need to set up a span/monitor port on that connection
(whichever Ethernet handles your phone's audio streams).

Second, I would recommend the free too "Cain and Abel". It is capable
of recording and monitoring RTP streams (and it costs nothing!). Keep
in mind though, it is free, comes with no support, and no fancy
recording options - it records and that is it.

There are several commercial packages available to record also, but they
generally cost quite a bit of money.

For troubleshooting problems I use ethereal (wireshark), just span the
uplink port.

For end-user's who want to record calls, I point them to:
http://www.usbcallrecord.com/universal_adapter.htm

think it costs like $100 per unit, but works pretty well

Two packages I've looked at at Callrex by Telrex and we also looked at
Oreka which has some free and commercial products.

We're in the process of implementing a national call recording solution
from co-nexus (www.4cxm.com). It has a nice interface (web-based), but
implementation is not going as smoothly as I had hoped.
