Is there any way to visualize the output of the iostat command to
assess number of I/O/sec, throughput, service time etc.?

I will do some benchmarks with a new FC attached SATA Raid storage
subsystem which is showing horrible slow performance and need a more
thorough insight of disk activities, specially trying to recognize
changes over time.

If all else fails, you can always "roll your own" front-end to iostat
using mrtg.
