I'm running Debian Sarge. Every week or so there is a new build
available (http://ftp.acc.umu.se/pub/cd-images/debian-weekly/i386/). My
question is: is it enough to just update my sarge installation with
apt-get or do I need to install the new build every time to stay updated.

You can keep the system up to date using apt-get. Just make sure you
have a mirror with the Debian packages in your sources.list.

apt-get update is usually enough.

I have put this in my root's cron list (once every week)

there's also a nice package called cron-apt for that purpose.
