I am trying to find a way to always have a tag exist in my output XML
even if the source tag (in the mapping) does not exist.  Right now if a
field does not exist the linked field in the output schema does not get
created.

I have tried setting the default on the field in the source and
destination schemas - that does not seem to work.

Is testing for the existence for each field individually - the only
way?

Any thoughts/suggestions would be great!
