Recently posted to comp.unix.shell is POSSE, Point Of Sale Script Etc.
It's a Bash script with a couple trivial dependancies (grep, cat, cLIeNUX
"bel", "clear"). It has a menu-driven text and keyboard interface and
keeps track of timed cost items like per-time pool tables.

I believe POS systems for small business is a nice niche for e.g. Linux. A
small store owner doesn't get the service they need from thier POS
provider like a large corporate retailer does, and so free/open is the way
to go. It also frees up the cash register for regular computer use.
